These energy balls make the perfect fall treat. Enjoy for breakfast or as a healthy snack any time!

Ingredients

  • 1/2 cup shredded carrots
  • 1/2 cup walnuts
  • 2 tbsp almond butter
  • 1.5 scoops of Vanilla Hol Food
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • 1/4 teaspoon nutmeg
  • 8 dates (pits removed)
  • unsweetened coconut flakes for rolling

Instructions

  1. Blend all ingredients (minus the coconut) in a food processor
  2. Form dough into balls
  3. Freeze for 20-30 minutes

Tips

These energy balls are a little gooey and harder to roll - try using coconut oil on your hands when forming into balls.
